Remember from "The Dreams of the Lost" when the Destroyer resurrected Buffy as the "Final Apocalypse"? Heck, the girl blows up. I don't think a few crow's feet are going to hurt her. As far as Eve goes, she's just flesh and bones. The Machines might be able to keep her around for a thousand years but at some point she's going to kick the bucket. So, you're going to need an immortal to keep the connection to the Slayerverse open.
Also, when a homicidal machine overlord tells you that the war is over ask'em to define "over".

So, the machines created life, let's see how that turns out. I believe that being a sentient being qualifies Eve as having a soul, but I don't think she's what you could call empaty o a moral core =S.
