Are you a practitioner of Aikido? I'm sorry for this if you are, but I gotta be honest, I don't think an Aikido master like the way you described would ever hurt his beginner-level dummy the way you described Xander being hurt during training. And Randori, multiple opponent fighting/sparring, would involve simply redirecting away any aggressors that block your path as you head away from the mob of enemies. No sane Aikido practitioner would ever engage a pack of enemies for more than three seconds, not even to save a victim. Hardly enough time to dust two vamps, let alone a pack. S/he would, instead, lure the pack away from the victim, running all the while her/himself.
I'm not saying this to be an asshole or anything. Those parts just bugged me a bit, since that's the way I was taught to use my own Aikido training, and I've been a practitioner for around ten years now, and a black belt for four.
About the direction you are going, you seem to be nuanced enough about the group, so I have realistic hope that is fighting stays realistic (even with traning less then Buffy who has training+speed+experience)
About why he never had training on the show, (aside from making him no longer the normal guy), there was not much time: 8 hours work+8hours sleep+3 hours patrol+2 hours date with Anya+2 hours movies to quip from+1hour dinner already makes 24 hours. Becoming a top athlete takes multiple hours training every day.

Seriously, with all the weaponry she has available, I'm betting she's either discovered, commissioned, or has been trained on things to kill the Night Bumpers already, since you've already she she's encountered vampires, plus that temple guardian she and Xander ran into during their initial introduction...
I'm thinking that being able to reach out and touch something from 500+ meters is better than going toe to toe with a Big Bad if you absolutely don't have to.
